Carrot kheer, with sugar, a simple and easy kheer made with carrot and milk. It is a very simple and healthy dessert and make this quite often since my kids love this. Few months back when i made this for a potluck my friends and their family liked this a lot and they asked me for the recipe. So here comes the recipe for yummy carrot kheer.

INGREDIENTS:
CARROT | 1/2 KG |
MILK | 1 LITRE |
SUGAR | 1/2 CUP |
CONDENSED MILK | 2 TBLSP(OPTIONAL) |
SAFFRON | FEW STRANDS |
ALMOND FLAKES | TO GARNISH |
METHOD:
- Peel the skin of the carrots and roughly chop it.
- Pressure cook this by adding 1 cup of milk till 4-5 whistles.
- Allow it to cool .
- Keep the milk aside and grind the carrots along with sugar in a blender into a smooth paste.
- Boil the remaining milk for 15-20 mins in a low flame.
- Add condensed milk to this. Switch off the flame.
- When the milk becomes warm add the carrot puree and the milk which we used for cooking the carrots, to this.
- Add the saffron strands and mix well
- Serve chill by garnishing with almond flakes.
Note:
- Do not add the carrot puree when the milk is hot.
- If you want a more creamy texture blanch a handful of almonds and grind it along with the carrots.
- If you are not condensed milk you can add some more sugar to the carrot kheer.

I too love this and my fav one. I too make same way ..some times I used to add 2 or 3 cashews while grinding for extra rich taste. By the way the cup looks cute and clicks as well…

I tried this recipe today. It came out very well except for one reason. I could see top creamy layer of the milk in the kheer which my hubby doesn't like it. How am I supposed to avoid it other than filtering?
If you boil the milk surely the creamy layer will formed. I didn't understand what you are exactly saying. IS the it the malai (paal edu)
Yes pal yedu only.
Paal edu will surely come when you boil the milk for extra time. That is the highlight in all the kheers. If you do not want,pressure cook the carrots in little water and add it to chilled milk. Use 1/2 cup of condensed milk to get the rich taste.
