Kalyana vatha kuzhambu recipe | Arachuvitta vatha kuzhambu is a popular South Indian tamarind based gravy, served in Tamilnadu weddings.
Usually after a heavy wedding meal, we always crave a simple for a simple curd rice towards the end. Very long back they used to serve curd rice with pickle. Later in wedding receptions, they serve curd rice with Manathakkali vatha kuzhambu. Though we make Vatha kuzhambu at home, some how the one served in weddings is truly amazing.
My friend’s mother in law, Mrs. Kalyani who gave me the recipe of Kalyana rasam, shared with the recipe of Kalyana vatha kuzhambu | arachuvitta kuzhambu. This tasted very similar to the one served in Tamil Brahmin weddings.
At home usually I make Vatha kuzhambu with veggies like small onions, drumstick, ladies finger, brinjal, capsicum, and beetroot. Somehow kids doesn’t like adding vathals in the kuzhambu. Even we don’t eat when we were kids. Later we started liking it.

Kalyana Vatha kuzhambu
Kalyana Vatha kuzhambu recipe
Ingredients
- Lemon sized tamarind
- 2 tbsp sesame oil
- 2 tbsp Manathakkali vathal
- 1 tsp coriander seeds | Dhaniya
- ¼ tsp methi seeds
- 1 tsp chana dal
- 1 tbsp coconut
- 3 red chili
- 3 tsp sambar powder
- ½ tsp turmeric powder
- ½ tsp mustard seeds
- Salt as needed
- Jaggery a small piece
- Curry leaves few
Instructions
- Soak a small lemon sized tamarind in hot water for 10 minutes
- Extract tamarind juice using 3 cups of water.
- Dry roast the dhaniya, chana dal, red chili, and venthayam till golden brown.
- Grind this along with 1 tbsp coconut
- In a pan add 1 tbsp sesame oil.
- Add ½ tsp mustard seeds and asafoetida.
- Once it crackles add the Dry Manathakkali vathal.
- Roast for a minute and keep the flame low.
- Add the sambar powder and saute for few seconds.
- Immediately add the tamarind extract.
- Add the turmeric powder and salt.
- Mix well and allow this to boil for 7 mins in medium flame.
- Now add the ground paste.
- Add a tiny piece of jaggery
- Mix well and boil till this comes to the right consistency.
- Switch off the flame and add 1 tbsp sesame oil.
- Garnish with few curry leaves.
- Serve with hot rice and any curry or kootu of your choice.

Curry looks yummy ! Is there any Hindi name for vathal ?
May be dried something is a vathal..Eg. Dried biiter gourd is a bittergourd vattal (pavakka/karela vattal), or dried mango is mango vattal (Aam/manga vattal).

You can make this with other veggies like onions, red pumpkin, chow chow, Brinjal, tomato, even plain urad papad or masala papad also can br used … It is very tasty

yes, you can use veggies like onions, lady's finger (okra), brinjal – it is just not vatral kolumbu but arachivita kolumbu regardless. Tastes yummy regardless:)

Whether it will withstand for a day? That is if I make in the night n if I use it next day afternoon for lunch means? is it good?
If you keep it inside the fridge,it will stand. But i am not sure if you pack for lunch box the next day,as it has coconut in it.
