Variety rice is most preferred by kids and adults for lunch boxes. My amma always packs podi smeared idli dosa or some variety rice for lunch box. I have seen many kids are so fussy these days and moms don’t know what to pack for lunch. Also, most of the kids are not eating all the veggies so it is very difficult for moms to incorporate healthy eating habits into kids.
This beetroot rice is very simple to make with easily available ingredients at home. Tweak the recipe according to your preference. This is one of the best ways to include beetroot in their diet. You can replace beetroot with carrot as well. Also if you are getting beetroot along with the greens in it, you can finely chop that and add it to the beetroot rice.

Beetroot rice recipe
Ingredients
- 1/3 cup uncooked rice 2 cups cooked rice
- 1 cup grated beetroot
- 1 finely chopped onions
- 3 tsp oil
- ½ tsp mustard seeds
- 1 tsp urad dal
- 1 tsp chana dal
- 2 tbsp peanuts
- Curry leaves
- 2 tsp lemon juice
- 1 tsp ghee
To grind
- ½ cup coriander leaves loosely packed
- 2 green chili
- 4 garlic cloves
Instructions
- Cook the rice and allow this cool. Ensure it is not clumpy.
- Grind coriander leaves, garlic and green chili into a coarse paste.
- Do not add any water while grinding.
- In a pan add oil and add the mustard seeds, urad dal, curry leaves and peanuts.
- Saute till the dal and peanuts turns crunchy.
- Now add the onions. Add salt and cook till translucent.
- Now add the ground coriander chili garlic mixture to this.
- Saute this for 1-2 minutes and add the grated beetroot.
- Cook for a minute. The beetroot gets cooked very fast.
- Now add the cooked rice to this.
- Gently mix well.
- Cook for a minute and switch off the stove.
- Add the lemon juice and ghee to this.
- Do not miss this step as it enhances the flavour.
- Mix evenly.
- Beetroot rice is ready to serve.
- You can pack this for lunch box or take this to picnic or travel too.
- Since we are not adding coconut in this recipe, this will stay good for travel.

- You can omit the onion and garlic and make it no onion no garlic beetroot rice.
- Also, you can add a tiny piece of ginger while grinding.
- Carrots can be replaced for beetroot.
- Rice can be replaced with millets too.
- Beetroot rice can be packed for lunch boxes, picnics, and for travel too.
