This cauliflower rice is a very healthy and easy lunch box recipe. I used to make this very often for kids. The onion and tomato-based masala, roasted cauliflower, along with cooked rice, makes the rice very flavourful.
As most kids love cauliflower this one will definitely be a super hit among them. If we make this as a one-pot meal the cauliflower will be mushy. So we cook the cauliflower and rice separately.
You can pack this for lunch box for kids and adults. Also if you are planning to host a party or have guests at home, you can include this tasty rice. This rice tastes similar to biryani. You can temper whole spices like bay leaf, cardamom, cinnamom before adding the ground onion masala. To give this a nice cauliflower biyani taste, you can add chopped mint leaves in the oil while cooking the onion masala.

Cauliflower rice recipe
Ingredients
- 1 cup basmati rice uncooked
- 1 cup cauliflower florets
- 2 tbsp oil
- 1 tsp red chili powder
- Coriander leaves to garnish
- Salt as needed
To grind
- 2 onions
- 5 cloves of garlic
- 1 tomato
- 1 tsp garam masala
- 1/4 tsp salt
Instructions
- Wash and cook the basmati rice with 1 and ¼ cup of water.
- You can add little salt and 1 tsp of oil while cooking.
- Pressure cook for 3-4 whistles.
- This came around 4 cups of cooked rice.
- Once it is done, spread the cooked rice in a wide plate.
- Put the cauliflower florets in hot water for 5 minutes.
- Drain the water and keep this aside.
- In a pan add 1 tbsp of oil.
- Roughly chop 2 onions and add this to the pan.
- Add 5 cloves of garlic
- Saute till it turns slightly golden brown.
- Switch off the flame and add 1 chopped tomato.
- Mix well.
- Cool this and grind with 1 tsp of garam masala and little salt.
- You can add 2 cardamom and 1 clove instead of garam masala.
- Cool and grind into a smooth paste.
- In a pan add 1 tbsp of oil and add the cauliflower florets.
- Add 1 tsp red chili powder and salt.
- Mix well and cook in medium flame for 10-12 mins.
- Let this get nicely roasted.
- Add ½ tbsp of oil in a pan.
- Add the ground onion tomato masala to this.
- Saute well till the moisture evaporates completely.
- This will take 5-7 minutes.
- Now add the roasted cauliflower florets to this.
- Mix it well.
- Now add in the cooked rice to this.
- Gently combine this well without breaking the rice.
- Let this cook for 2 minutes.
- Switch off and garnish with coriander leaves.
- Cauliflower rice is ready.
- You can pack this for lunch box or serve at home along with raita.

Please tell me why you pressure cook the rice. It may get over-cooked and mushy. If I did pressure cook as you say how many whistles?
We generally pressure cook the rice. If we add exact ratio of water it will not get mashed. Pressure cook for 3 whistles
