Dahi bhindi recipe, with step by step pictures, creamy yogurt based gravy using ladies finger, pairs well with roti, jeera rice or plain basmati rice. I have tried this Dahi bhindi recipe for a cookery demo here in Singapore. It was pretty much loved by the participants who attended the demo. A creamy gravy loved by everyone at home, paired it up with Plain basmati rice. Generally bhindi | ladies finger is loved by everyone at home. We make South Indian style Vendakkai curry or Vendakkai sambar or mor kuzhambu with vendakkai. If i want to make a North Indian version, i always make Kadai bhindi only. This Dahi bhindi is a must try recipe using ladies finger.
Ingredients
- Bhindi | ladies finger 14
- Yogurt | Curd 1 cup
- Capsicum 1/2
- Besan | kadalai maavu 1 tblsp
- Turmeric powder 1/4 tsp
- Tomato 1
- Cumin seeds 1/2 tsp
- Green chilli 1
- Red chili powder 1 tsp
- Garam masala 1 tsp
- Oil 3 tsp + 2 tsp
- Salt as needed
- Water 1/2 cup
- Kasoori methi 2 pinches
- To roast and grind
- Onion 1
- Cashew nuts 7-8
- Garlic cloves 4
- Oil 3 tsp

Dahi bhindi recipe, with step by step pictures, creamy yogurt based gravy using ladies finger, pairs well with roti, jeera rice or plain basmati rice.
Method :
- Let’s first do the roasting and grinding of the ingredients.
- Roughly chop the onion.
- In a pan add 3 tsp of oil and add the onions.
- Add the cashew nuts and garlic cloves.
- Saute till golden brown.
- Switch off and cool completely.
- Wash the ladies finger and pat dry them.
- Cut the ladies finger into big pieces.
- Chop the capsicum into big cubes.
- In a pan add 3 tsp of oil.
- Add the ladies finger and cook the ladies finger in a medium flame.
- Do not change the color.
- Add salt towards the end and keep it aside.
- In the same pan add the capsicum and saute for 2 minutes.
- Keep it aside.
- In a bowl add the curd, besan and turmeric powder. We are adding besan to hold the curd mixture consistency. Besan will not make the gravy to curdle.
- Add 1/4 cup of water and whisk the mixture without any lumps.
- Keep it aside.
- Now grind the roasted onion mixture into a fine paste.
- You can add little water while grinding.
- In a pan add 2 tsp oil and add the cumin seeds and 1 green chili.
- Now add in the ground paste.
- Puree 1 tomato.
- Add it to the pan.
- Add red chili powder and garam masala.
- Mix well and add 1/4 cup of water.
- Cook till the masala powders leave the raw smell.
- Add in the kasoori methi.
- Now add in the yogurt mixture.
- Mix well.
- Add salt.
- Add in the cooked ladies finger and capsicum to this.
- Mix well and cook for 10 minutes in a slow flame.
- Since we have added cashews and besan the gravy will not curdle.
- Add kasoori methi in the last and mix well.
- Switch off the flame.
- Enjoy with hot rotis | jeera rice.
- Finger licking creamy Dahi bhindi is ready to serve.
Notes
1. Adding besan and cashew nuts holds the consistency of the gravy.
2. Ladies finger can be replaced by par boiled and roasted potato.
3. Ensure that the yogurt is not sour for making Dahi bhindi recipe.
