Easy chole masala recipe without onion, garlic, and tomato, perfect side dish for chapati, poori, and bhatura. We usually make chole masala in an onion and tomato-based gravy. I have already posted a no onion no garlic version of channa masala with video. This is an easy chole masala without the addition of onion or tomato. My friends invited me for a get-together and poori and chole masala was on their menu. I totally loved the taste of the chole masala. As always I asked her for the recipe. This is a perfect bachelor and dorm friendly recipe, without any grinding process.

Servings 4
Ingredients
- 1 cup Chickpeas | channa
- 2 tsp Store-bought Chole masala
- 1 tsp Cumin seeds
- 4 tsp Oil
- Coriander leaves few
- 1 tsp Ginger
- Salt as needed
Instructions
- Soak Kabuli channa for 7-8 hours
- Cook till 5-6 whistles.
- Add 4 tsp oil in a pan
- 1 tsp cumin seeds
- Add 2 tsp chole masala to the pan, I used Everest brand.
- Saute for few seconds. Ensure not to burn.
- Add Cooked chickpeas.
- Take 3 tblsp of cooked chickpeas and grind into a paste.
- Add it to the pan and mix well.
- Slightly mash using a masher.
- Let this boil for 5 minutes.
- Adjust water consistency.
- Stir in between.
- Switch off the flame.
- Garnish with coriander leaves
- Add thinly cut ginger.
- Easy chole masala is ready to serve. Enjoy with poori or chapati

Notes
- Ensure that the chole is cooked softly.
- Store bought chole masala gives all the flavour, no need to add any other spice
- Soak Kabuli channa for 7-8 hours or overnight.
- Pour enough water and pressure cook till 5-6 whistles.
- In a pan add 4 tsp oil and add in the cumin seeds.
- Add in the store-bought chole masala to the pan.
- Saute for 2 minutes, ensure not to burn that.
- Add in the cooked chole to the pan, do not drain the water.
- Grind 3 tblsp of cooked chole into a fine paste.
- Add the ground paste to the pan. Mix well.
- Slightly mash it using a masher.
- Add in the turmeric powder
- Let this boil for 5 minutes. Check for salt.
- Garnish with coriander leaves and thinly sliced ginger.
- Ensure that the chole is cooked softly.
- Store-bought chole masala gives all the flavor, no need to add any other spices.
Instead of chole masala can we use garam masala powder??
Yes, if using add few green chilis in the oil. As garam masala won’t be spicy.
Tried and it came out well…would same recipe work good with rajma and store bought rajma masala powder?
