Garlic coriander fried rice | Easy fried rice recipe perfect for a quick lunch or dinner. Coriander fried rice recipe with full video and step by step pictures.
Vegetable fried rice is always a super hit one at my place. We usually make fried rice using spring onion whites and greens. But most of the time we run out of spring onions at home. But usually, we keep a good stock of coriander leaves in the kitchen. Also, it is widely available in the small shops too.
I saw this recipe on Tarla dalal’s page and found this very simple and interesting. Tried this a few days back for a weekend dinner and the kids loved it very much. I was a bit skeptical as to how coriander leaves will taste in fried rice. But it tasted so well.
The main ingredients in this recipe are garlic, chili, coriander leaves, and rice. I used basmati rice for this fried rice. You can use sona masoori rice too. Ensure the rice is cooked into separate grains and not mushy.

Garlic coriander fried rice
Ingredients
- 2 cups cooked rice
- 2 tbsp finely chopped garlic
- 1 finely chopped onion
- ¼ cup finely chopped capsicum
- 1 tsp soya sauce
- 1.5 tbsp oil
- ½ tsp sugar
- 1 green chili
- Salt as needed
- ½ cup finely chopped coriander leaves
Instructions
- In a pan add oil and add the finely chopped garlic and green chili.
- Saute for a minute.
- Add the finely chopped onions.
- Saute for a minute.
- Add salt to taste and cook the onion for a minute.
- Now add in the sugar. Caramalised sugar enhances the taste of the fried rice.
- Now add in the capsicum.
- You can add veggies like carrot, cabbage too.
- Saute in high flame for a minute.
- Now add the soya sauce and mix well.
- Add the cooked rice and mix gently and evenly.
- I used basmati rice, you can use short grain rice too. Sona masoori rice will be perfect too.
- Now add the finely chopped coriander leaves.
- Mix well.
- Switch off the flame.
- Garlic coriander rice is ready.
- You can serve with cauliflower curry or with a Manchurian gravy too.

2. You can add tomato ketchup and chili sauce after adding the soya sauce.
