Masala pasta is a twist to our original Italian pasta using pasta sauce. This Masala pasta is a popular street in India nowadays. We all have our basic version of making this Indian-style masala pasta. I have shared my simple version of this using Macroni pasta. You can use penne, fusilli, and butterfly pasta too.
The Indian spice powders like coriander powder and garam masala add a tasty twist to the pasta. If you want to try some Indian fusion recipes, try this one. We are not using any sauce for making this pasta. The basic onion tomato gravy gives a nice taste to the desi pasta. This can be an easy weeknight dinner or a perfect lunch box recipe. You can pair this with a raita too. Though it sounds weird, trust me it tastes good.

Indian style Masala pasta recipe
Ingredients
- 1 cup pasta I used macroni pasta
- Salt as needed
- Water to cook the pasta
- 1 tbsp oil
- 1 onion
- 2 tsp ginger garlic paste
- 1 tomato blend into puree
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp oregano
- ½ tsp turmeric powder
- 1 tsp garam masala optional
- 1 cup mixed veggies I used carrot, peas and capsicum
- 2-3 tbsp grated cheese
Instructions
- Add water in a saucepan, little salt and 1 tsp of oil.
- Allow this to boil.
- Now add 1 cup of pasta, I used MAcroni pasta. You can use any variety of pasta.
- Cook till it becomes aldente.
- Reserve 1/3 cup of pasta water
- Drain the pasta and keep aside.
- Do not run the pasta in running water. This will remove the starch and the masalas will not get coated on the pasta fully.
- Add 1 tbsp of oil in a pan and add 1 thinly sliced onions
- Add little salt and saute this
- Now add 2 tsp of ginger garlic paste
- Cook till the raw smell goes off.
- Now add 1 cup of mixed veggies. I used carrot, peas and capsicum.
- Mix well
- Now add 1 tsp red chili powder, 1 tsp coriander powder, ½ tsp turmeric powder and salt.
- Mix well and cook for a minute
- Add 1 cup fresh tomato puree. I pureed one big tomato, if using store bought tomato puree add 1/3 cup as it will be little thick and sour.
- Mix well
- Now add 1/3 cup of pasta reserved water
- Let this cook for 5 minutes
- At this stage add the cooked pasta to this.
- Mix well.
- Add 1 tsp oregano (optional) and add 2-3 tbsp grated cheese
- Gently combine well
- Indian style masala pasta ready

Notes
- You can add sweet corn kernels, blanched broccoli to this pasta.
- You can add 1 tsp of garam masala in the last and give it a good mix.
- 2-3 tbsp of Fresh cream can be added before adding the cooked pasta.
- Indian masala pasta is perfect for kid's lunch box or a weeknight dinner.

Jey, Lovely post! I am a fan of indian style pastas and make varities often. Mix some cooked pasta with karuvepillai podi. Garnish it with some ground nuts and ghee. Or just plain ghee and curry leaves in sphagetti is awesome! I have tried with green chutney too. That was so good. Use just like a pesto, sauteed with red capsicum and corn. Also regularly gunpowder ( idli molagai podi) pasta with gingelly oil. Perfect snacks!
