Masala tea| Masala chai recipe

Masala tea | masala chai is a popular Indian tea made with milk, tea powder, and spices. Be it a hot sunny day or a cold winter, tea is a staple in most houses. We used to take tea once in the morning. I generally don’t prefer to have a second dose of tea or coffee. Very rarely during weekends, when I make for my hubby I take a sip of tea in the evening. Usually, I make ginger cardamom tea. I have also posted the recipe for Homemade chai masala in Jeyashris kitchen. This is a Masala tea | masala chai recipe with fresh tea masala.

For the past few months, we are enjoying the cold weather in Hongkong. Though it is not super cold as how US and Canada have, for us it is really cold. We have always grown up in tropical countries and always experienced hot weather. And the cold weather demanded a few doses of masala chai on a day. I love the way my friend in Singapore makes tea. She makes adarakwali tea every morning. A few times I tasted that too and I love the taste. I used the same method for making this recipe. Please add the ingredients as per your choice of taste. Masala chai recipe

Popular Indian masala chai using fresh spices

Ingredients

  • 1/2 cup Milk
  • 1.5 tsp Tea powder
  • 1.5 cups Water
  • Ginger a small piece
  • 2 Cardamom
  • 2 Cloves
  • Cinnamon 1 small piece
  • 1/8 tsp Fennel seeds
  • 1 tsp Sugar

Instructions

  • In a mortar and pestle put a small piece of ginger, 2 cardamom, 2 cloves, a small cinnamon piece and 1/8 th tsp of fennel seeds.
  • Crush it coarsely. This will bring out all the flavours of the spices and make the masala chai flavourful.
  • In a saucepan, add 1.5 cups of water. You can reduce the water if you want a thicker tea.
  • Add the crushed spices.
  • Add 1.5 tsp tea powder. I used red label tea powder, you can use any thing of your choice.
  • Let this boil for 2-3 minutes.
  • Add ½ cup of milk to this.
  • Add sugar as desired. Stir it well.
  • Let this boil for a minute.
  • Do not boil more after adding sugar, it will spoil the taste.
  • Strain the mixture.
  • Serve hot.
  • Masala chai is ready.

Notes

1. You can add more milk and reduce the quantity of water.
2. A pinch of nutmeg can be added to the masala chai.
