Easy-to-make vegetable curry recipe pairs well with roti and rice
Servings 4 people
Ingredients
- 1 cup Mixed Vegetables
- 2 Tomato
- 1 Onion
- ½ Capsicum
- 4 Garlic cloves
- ¼ cup Paneer
- 1 tsp Red chili powder
- 1 tsp Coriander powder
- ½ tsp Garam masala
- 1 tbsp Oil
- ¼ cup Milk or fresh cream
- 2 pinch Kasoori methi
- Salt as needed
Instructions
- Chop one onion, and tomatoes roughly.
- Cut the capsicum into cubes.
- Chop the vegetables into cubes.
- In a pan, add a tbsp of oil and saute the paneer and capsicum separately for 5 minutes.
- In a pan add ½ tbsp of oil and add the onion and garlic. Saute till the onions turn slightly golden brown color.
- Now add the chopped tomatoes.
- Cook for a minute and switch off the flame.
- Allow this to cool completely.
- Add coriander powder, and red chili powder to this.
- Grind this into a smooth paste. Add water if needed, while grinding.
- In a pan, add the ½ tbsp of oil and add the ground masala.
- Cook for a minute.
- Now add the vegetables to this and add ½ cup of water.
- Add salt.
- Cover and cook for 7 minutes.
- Now add the paneer and capsicum to this.
- Let this boil for 2 minutes.
- Now add the milk and boil for a minute. Use raw milk or boiled and cooled milk. Do not add hot milk. Add kasoori methi
- Use full cream milk.
- You can add 1 tbsp of fresh cream too.
- Mix well and allow it to boil for 3 mins.
- Switch off the flame.
- Serve with roti, naan, kulcha, or jeera rice.
