Paneer pulao is a delicious one-pot meal, that can be served at home along with a simple dal and raita. Also, we can pack this for the lunch box too.

Paneer pulao is a delicious one-pot meal, that can be served at home along with a simple dal and raita. Also, we can pack this for the lunch box too. Usually, we make onion tomato-based gravies with paneer. Many people have this hesitation about adding the paneer to rice as it will become rubbery.

In this recipe, we are soaking the paneer in hot water which helps to soften the paneer even after it is cooked. We are not adding too much masala to this pulao. The ginger garlic mint and coriander leaves add more flavor to the pulao. Since we don’t like the addition of whole masala spices, I am adding 1 tsp of garam masala powder to this paneer pulao.

I made this paneer pulao in the pressure cooker and it turned out perfectly well without sticking to the bottom of the cooker. Paneer pulao pairs well with simple raita but we had it with methi dal and cucumber raita.

Easy one pot paneer pulao recipe, perfect for lunch box

Ingredients

  • 250 gms paneer
  • 1.5 tbsp oil
  • 1 tsp ghee
  • 1.5 cup basmati rice
  • 3 cups of water
  • 1 onion thinly sliced
  • 1.5 tsp red chili powder
  • 1 tsp garam masala
  • Salt as needed

To grind

  • ¼ cup coriander leaves
  • ½ cup mint leaves tightly packed
  • 1 tomato
  • 5 garlic cloves
  • 1 small piece ginger

Instructions

  • Wash and soak the basmati rice for 20 minutes.
  • In a pan add 2 tsp of oil and add the paneer cubes.
  • Saute this till it becomes slight golden brown.
  • Take out and immerse this in hot water.
  • This helps to soften the paneer. It will be soft even after cooking with the rice.
  • Grind the mint leaves, coriander leaves, tomato, garlic and ginger into a smooth paste.
  • In a pressure cooker add the remaining oil and 1 tsp ghee.
  • Add the thinly sliced onions and saute this till translucent.
  • Now add the ground mint coriander paste to this.
  • Saute for a minute.
  • Add the red chili powder, garam masala and salt.
  • Cook for a minute.
  • Drain the paneer from water and add this into the cooker
  • Add the soaked basmati rice along with the water.
  • Check for salt.
  • Mix well and let this starts boiling.
  • Cover the cooker and pressure cook for 2 whistles.
  • Simmer this for 5 minutes and switch off the flame.
  • Let the pressure release naturally.
  • Open and gently mix from the sides.
  • Paneer pulao is ready.
  • Serve with any raita of your choice.
