Iyengar bakery Khara biscuit recipe – Savoury cookies – Eggless savory cookies recipe with step-by-step pictures.
Though I have heard about these melt-in-mouth Khara biscuits from Iyengar bakery I have never tasted them. A few weeks back tried the same at home and it turned out so well. We all loved the aroma of the khara biscuits and it paired well with a cup of chai.
The addition of green chilis and the flavour of coriander leaves and cumin seeds enhanced the flavour of the cookies. If you are looking for a savory cookie recipe, then you should try out these easy savory cookies.

Khara biscuit recipe
Iyengar bakery-style eggless khara biscuit recipe
Servings 10 biscuits
Ingredients
- 1 cup maida | plain flour
- 2.5 tbsp +1/2 tsp butter
- 2 tsp sugar
- ½ tsp salt
- ½ tsp cumin seeds
- 1 green chili finely chopped
- 1.5 tbsp coriander leaves finely chopped
- 1.5 tbsp yogurt
Instructions
- Beat the butter and sugar well until creamy.
- Add the yogurt to this and mix well.
- Now add the flour, salt, chopped chili, and cilantro and mix well and make this into a stiff dough.
- Do not knead this by adding too much pressure.
- Take a portion of the dough and roll it.
- Cut them into any desired shapes using a cookie cutter. I made it into a round shape by using a lid of a box.
- Grease the baking tray and place this on the tray.
- Mine yielded 10 biscuits.
- Bake this in a preheated oven at 150 degrees.
- Bake for 15- 20 mins. Mine got done in 17 mins.
- The biscuit will not get brown on the top, but it will get a nice color at the bottom.
- We had this with a hot cup of tea and this was absolutely awesome.

1. Increase the quantity of yogurt by 1 tbsp if they can’t get a dough consistency. 2. I did not add cumin seeds. 3. You can add ajwain seeds, finely chopped mint, or any other herbs of your choice. 4. You can use 1/2 cup of whole wheat flour and 1/2 cup of all-purpose flour for making these savory cookies.

These are my fav savoury biscuits. I got addicted after baking these for ICC challenge, and this time when we went to Bangalore I made sure to visit Iyengar bakery and had feasted on these.

Hello Jeyashri – try blending all the ingredients in a mixer in a cold state. Use cold butter or fat and blend. Wrap in a cling foil and place in the fridge for 30 mins.
Then remove the dough, roll it out, make your biscuits round and bake. You'll see a better finish.

I made the Nan Khatai according to your recipe, it was absolute yum. I felt so proud after baking it, thank you so much.
Next I tried the Tutti Fruity cookies and the Khara Biscuits. They tasted good, but they were not like cookies. They were not soft and crunchy, instead little hard and floury. I followed your recipe quite exactly. Can you suggest what I may not have followed correctly.

Sorry for the delayed reply Shobha. The reason may be because of you must have baked it for a little lesser time. Temperature and timings vary from oven to oven.
Try decreasing the temperature and increase the cooking time
