One-pot veg biryani is always a super hit in our home. I always use Basmati rice for making Veg Biryani. Whenever I have guests I make the Hyderabadi Veg Dum Biryani at home. I was first introduced to this Seeraga samba rice by our neighbor aunty in Madurai. She makes excellent Biryani. She never uses basmati rice and also insists on my mom try this seeraga samba rice. Seeraga samba rice is very aromatic. We can use the seeraga samba rice for making Ven pongal, sakkara pongal and paal payasam too.
Ever since I have tried Homemade Biryani masala, I wanted to try out Veg biryani using the Homemade Biryani masala. I called up our neighbor aunty, who is our very good family friend, and got the recipe from her. We all loved it very much.

Seeraga Veg Biryani in Pressure cooker
Seeraga Samba Veg Biryani
Ingredients
- 1 cup Seeraga samba rice
- 2 cups mixed veggies*
- Mint leaves few
- Coriander leaves few
- 2 Green chili
- 1 Bay leaf
- 1 big Onion
- 4 tsp Oil
- 1 tbsp Ghee
- 2 tsp ginger garlic paste
- ¾ tsp Biryani masala
- Salt as needed
- 1.25 cups Water
- *I used carrot beans, and green peas.
Instructions
- Wash and soak 1 cup seeraga samba rice.
- Soak in 1.25 cups of water for 20 minutes
- Grind few mint leaves and coriander leaves into a fine paste. You can add little water while grinding.
- In a heavy-bottomed pressure cooker add 4 tsp oil and 1 tbsp ghee.
- Add 2 slit green chilis and 1 bay leaf.
- Now add in 1 thinly sliced onions. Saute it in medium-low flame.
- Add little salt while cooking the onions. It will enhance fast and even cooking.
- At this stage add 2 tsp ginger garlic paste. Cook till the raw smell goes off.
- Add the mint coriander paste now and saute it for a minute.
- We are going to add Biryani masala at this stage. I used homemade biryani masala. You can use store-bought biryani masala too.
- If you want the Biryani to be spicier add red chili powder as per your taste, at this stage.
- Now add 2 cups of veggies. I used carrot, beans, and green peas.
- Mix well and add in the soaked rice.
- Saute for a minute and add the soaked water.
- Check for salt. Cover the pressure cooker.
- Let this cook till 1 whistle and keep it in the lowest flame for 7 minutes.
- Switch off, allow the pressure to release naturally.
- Open the cooker and gently mix the rice from the sides.
- Seeraga samba veg biryani is ready.
- Serve hot with Onion raita.
- Pudina thokku also goes well with Veg Biryani.

2. You can add fried bread pieces and add it before serving.
