We include salad in our meals most days. Thankfully, both the kids eat salads without much fuss. I have posted many varieties of salad recipes in Jeyashris kitchen. I attended a salad class and learned about this Thai-style Raw papaya salad. I will post the original Papaya salad soon. Since it is peak summer I thought I would try this with Watermelon. It tasted so good and was a super hit at home.
I decided to shoot this recipe and share it with you all. If you love watermelon, you should try this interesting easy no-cook Thai watermelon salad. If you are curious about the ingredients used in Thai salad dressing, they use bird’s eye chili, brown sugar, salt, tamari sauce, onion, garlic, and soy sauce. The dressing will be a burst of amazing flavors. I used lemon juice instead of tamari sauce. You can add thick tamarind extract too.
The same salad can be made using ripe mango or pineapple too. The roasted peanuts add a nice crunch to the watermelon salad.

Thai watermelon salad
Ingredients
- 2 cups watermelon cut into cubes
- ¼ cup carrot thinly cut
- ¼ cup cucumber thinly cut
- ¼ cup raw mango thinly cut
- 2 tbsp capsicum thinly cut
- 4 tbsp roasted peanuts
For the dressing
- 2 small onion shallots
- 1 clove garlic
- 1 tbsp jaggery or brown sugar
- 1 lemon you can use 1/2 tbsp tamarind extract
- 1 bird’s eye chili I used ¾ th of the chilli
- 1 tbsp soya sauce
- Salt as needed
Instructions
- Let’s make the dressing first.
- In a mixie jar add 2 small onion, 1 garlic clove, 1 tbsp jaggery or brown sugar, 1 brid’s eye chilli, lemon juice and salt.
- Pulse few times
- Add 1 tbsp soya sauce
- Mix well and keep aside.
- Alternatively you can use a mortar and pestle to crush this.
- In a bowl add 2 cups of cubed watermelon, thinly sliced carrots, cucumber, capsicum and sliced raw mango.
- Add the dressing now
- Mix well
- Garnish with 4 tbsp of roasted peanuts
- Thai Watermelon salad ready

- You can pound the dressing in a mortar and pestle instead of pulsing in the mixie.
- You can add fresh ripe mango instead of Watermelon
- Thai Watermelon salad is a perfect one for a party.
