Veg Mayonnaise sandwich recipe with video. I have been planning to post this mayo sandwich recipe for a long time but here i have never seen Eggless Mayonnaise in any stores. Last year i bought from Nuts n Spices Chennai but before i plan and make the sandwich, somehow it got over. This time i got the Eggless Mayo again and finally made the sandwich recipe for post. Veg Mayonnaise Sandwich recipe
Preparation Time : 15 mins | Cooking Time : Nil|Serves: 2
Bread slices 4
Green chutney 2 tblsp
Butter a needed
Carrot 1/4 cup (grated)
Capsicum 1/4 cup
Cabbage 1/2 cup
Eggless Mayonnaise* 1 and 1/2 tblsp
* I used store bought mayonnaise. You can use Cream cheese,honey mustard sauce or any cheese spread.

Method:
- Finely chop the cabbage and capsicum.
- In a bowl add the grated carrots,cabbage and capsicum.
- Add the mayonnaise to this and mix well.
- In one bread add the green chutney on one side. This is purely optional but highly recommended.
- Spread butter in another bread.
- Place 1 tblsp of veg mayonnaise mixture on the buttered portion of the bread. Spread this on the bread.
- Top this with the chutney smeared bread on the top.
- Cut this into triangles.
- Serve immediately.
- You can cut the sides of the bread, before spreading the butter and green chutney.

Notes:
- This sandwich can be toasted in a tawa of sandwich maker. In that case apply butter on the other 2 sides of the bread.
- I used thick sandwich bread.
- Do not add more mayonnaise,else it will be soggy.
- You can add some pepper powder or tomato ketchup to the veg mayo mixture.
- I kept one portion of sandwich for 4 hours, and it was perfect and not too soggy.
- Ideally if the same proportion is followed, this veg mayonnaise sandwich can be packed for kids snack box.
