As you all know we don’t eat egg or add egg in my baking too. Got confused with the title! The recipe of veg fried is without egg but we are making it look and taste like egg fried rice. This is similar to our veg omlette | besan cheela recipe
Besan | gram flour | kadalai maavu is used to replace the egg. This gives good volume and nice taste and texture to the fried rice. I am usually not a fan of mock meats which is quite popular in Singapore and Hongkong. I somehow don’t like the texture and taste of it. Few weeks back my daughter made this vegan egg fried rice after seeing it on Instagram. I tasted that and loved the taste. So wanted to try it on my own and share the recipe here.

Vegan egg fried rice recipe
Ingredients
- 3 cups cooked rice
- 2 tbsp oil
- ½ cup besan | gram flour | chickpea flour
- ¼ tsp turmeric powder
- ½ tsp black salt | kala namak
- Salt as needed
- 2 tbsp chopped garlic
- 2 tbsp chopped spring onion greens
- ¼ cup carrots
- ¼ cup sweet corn
- 3 tbsp capsicum
- 1 tbsp soya sauce
- ½ tbsp red chili sauce
- Pepper powder to taste
- Spring onion greens few
Instructions
- Cook rice into separate grains.
- In a bowl add the gram flour | chickpeas flour.
- Add turmeric powder, black salt, few pinches of pepper and salt.
- Add water and make it into a thick batter.
- In a pan add 1 tbsp oil and add the gram flour mixture.
- Cook this in medium flame.
- Initially it will become a whole mass.
- After a few minutes it will start crumbling.
- Once the besan is crumbly like a bhurji, switch off and keep aside.
- In the same pan, add 1 tbsp oil.
- Add 1 slit green chili, finely chopped garlic, and chopped spring onion greens.
- Cook this for 2-3 minutes.
- Add the carrot, sweet corn, and capsicum.
- Cook this on high heat for 2 minutes.
- Add soya sauce and red chili sauce.
- Saute for a minute and add the cooked gram flour.
- Add the cooked rice to this now.
- Mix well evenly and gently.
- Cook this for a minute and switch off.
- Vegan egg fried rice is ready.

- I used basmati rice, you can use any short-grain rice.
