Vegetable biryani no onion no garlic – Pressure cooker vegetable biryani recipe, without the addition of onion and garlic. Recipe with full video and step-by-step pictures.
Usually, biryani is made with lots of onions and ginger garlic paste. I had some guests at home and planned to make Vegetable Biryani. I actually wanted to pack it for their one-day trip. But suddenly, came to know that few of them don’t take onion and garlic. I didn’t have the time to make 2 different ones, so attempted no onion no garlic Veg biryani.
This recipe was a super hit among the guests and even with my family. So I wanted to blog this recipe. I am sure it will be useful for many people. Especially when you have elders at home, who don’t eat onion or garlic, you can make this for them. Also if you are running out of time in the morning to chop the onion and peel the garlic, you can quickly make this using frozen veggies.
We have a lot of no onion and no garlic recipes available in Jeyashris kitchen. Usually, most of the South Indian variety rice is made without onion and garlic. Be it coconut rice, puliodarai, lemon rice, karuvepillai sadam- everything can be made easily without onion and garlic.

No onion garlic veg biryani recipe
Ingredients
- 1 and 1/2 cup basmati rice
- 2 cups of water
- 2 tbsp oil
- 2 tsp ghee
- Salt as needed
- 1 and 1/2 cup mixed vegetables carrot, beans and peas
- ¼ cup cauliflower florets
- ½ capsicum
To grind
- 1 cup mint leaves loosely packed
- 1 cup coriander leaves loosely packed
- 2 green chili
- 1 small piece ginger
- 1 tsp fennel seeds
- ½ tsp turmeric powder
Instructions
- Wash and soak the basmati rice in 2 cups of water.
- In a pan add 1 tsp of oil and saute the capsicum for 2 minutes and keep this aside.
- Blanch the cauliflower and saute this for5 minutes. Add little salt and cook.
- Keep this aside.
- Since capsicum and cauliflower will become mushy if we pressure cook, we are cooking it separately.
- Grind the green chili, ginger, mint leaves, coriander leaves, fennel seeds and turmeric powder into a fine paste.
- You can add little water while grinding.
- In a pressure cooker add the oil and ghee.
- Add the ground paste to this.
- Saute for 2 minutes.
- Now add the mixed vegetables to this and mix well.
- Cook for a minute.
- Now add the soaked rice along with the water.
- Add salt as needed.
- Cover this and pressure cook for a whistle.
- Keep in a low flame for 10 minutes and switch off the cooker.
- Let the pressure naturally release.
- Add the capsicum and cauliflower to this.
- Gently mix this well.
- Delicious no onion no garlic Veg biryani is ready.
- Serve with a simple raita or a sabzi of your choice.

- You can add whole garam masala like bay leaf, cardamom, and cinnamon stick while adding the oil and ghee in the beginning.
- Unless you mention, no one can make out this is no onion no garlic vegetable biryani.
