Wash and pressure cook the rice by adding little salt and ½ cup of water.
Once it is done, spread the rice and ensure the grains are separate.
In a pan add 2 tsp oil and add the paneer cubes.
Saute this till slightly golden brown.
Take out and keep this aside.
In the same pan add 2 tsp butter.
Add the sweet corn to this.
I used frozen sweet corn, if using fresh ones, boil separately and then add to the pan.
Saute for 2 minutes.
Add salt, oregano and chili flakes to this.
Saute for a minutes in medium flame.
Ensure not to burn this.
Now add the paneer cubes and the cooked rice to this.
Gently mix without breaking the rice.
Butter corn paneer rice is ready to serve.
You can pack this for lunch box or serve at home along with raita or any masala too.

Notes
1. You can add finely chopped garlic before adding the sweet corn.
2. Instead of paneer cubes you can use scrambled paneer too.
3. Butter corn paneer rice pairs well with capsicum masala and chana masala.
