Wash and cook the basmati rice with 1 and ¼ cup of water.
You can add little salt and 1 tsp of oil while cooking.
Pressure cook for 3-4 whistles.
This came around 4 cups of cooked rice.
Once it is done, spread the cooked rice in a wide plate.
Put the cauliflower florets in hot water for 5 minutes.
Drain the water and keep this aside.
In a pan add 1 tbsp of oil.
Roughly chop 2 onions and add this to the pan.
Add 5 cloves of garlic
Saute till it turns slightly golden brown.
Switch off the flame and add 1 chopped tomato.
Mix well.
Cool this and grind with 1 tsp of garam masala and little salt.
You can add 2 cardamom and 1 clove instead of garam masala.
Cool and grind into a smooth paste.
In a pan add 1 tbsp of oil and add the cauliflower florets.
Add 1 tsp red chili powder and salt.
Mix well and cook in medium flame for 10-12 mins.
Let this get nicely roasted.
Add ½ tbsp of oil in a pan.
Add the ground onion tomato masala to this.
Saute well till the moisture evaporates completely.
This will take 5-7 minutes.
Now add the roasted cauliflower florets to this.
Mix it well.
Now add in the cooked rice to this.
Gently combine this well without breaking the rice.
Let this cook for 2 minutes.
Switch off and garnish with coriander leaves.
Cauliflower rice is ready.
You can pack this for lunch box or serve at home along with raita.

1. You can add few cashew nuts along with onions. This will give a nice rich taste.
