Add water in a saucepan, little salt and 1 tsp of oil.
Allow this to boil.
Now add 1 cup of pasta, I used MAcroni pasta. You can use any variety of pasta.
Cook till it becomes aldente.
Reserve 1/3 cup of pasta water
Drain the pasta and keep aside.
Do not run the pasta in running water. This will remove the starch and the masalas will not get coated on the pasta fully.
Add 1 tbsp of oil in a pan and add 1 thinly sliced onions
Add little salt and saute this
Now add 2 tsp of ginger garlic paste
Cook till the raw smell goes off.
Now add 1 cup of mixed veggies. I used carrot, peas and capsicum.
Mix well
Now add 1 tsp red chili powder, 1 tsp coriander powder, ½ tsp turmeric powder and salt.
Mix well and cook for a minute
Add 1 cup fresh tomato puree. I pureed one big tomato, if using store bought tomato puree add 1/3 cup as it will be little thick and sour.
Mix well
Now add 1/3 cup of pasta reserved water
Let this cook for 5 minutes
At this stage add the cooked pasta to this.
Mix well.
Add 1 tsp oregano (optional) and add 2-3 tbsp grated cheese
Gently combine well
