Okra pulao recipe

  • Wash and soak ½ cup of basmati rice in ¾ cup of water for 20 mins.
  • Cook ½ cup of basmati rice in ¾ cup of water in pressure cooker for 3 whistles.
  • Once it is done spread in a plate and cool.
  • In a pan add 1 tbsp of oil and add add 1 thinly sliced onions.
  • Add little salt and saute this till translucent.
  • Add 1 tsp of ginger garlic paste at this stage.
  • Cook till raw smell goes off
  • Now add few cashew nuts and cook till it turns slight golden brown
  • Now add ½ tomato, mix well and cook for a minute.
  • Add 1-2 tsp sambar powder, ½ tsp turmeric powder and salt.
  • You can add equal quantity of red chili powder and coriander powder instead of sambar powder.
  • Add chopped lady’s finger and cook on medium flame
  • Once the vendakkai is cooked, add the cooked rice to this.
  • Gently mix well evenly.
  • Garnish with coriander leaves.
  • Okra pulao | Vendakkai pulao is ready

1. You can use raw rice or par boiled rice instead of basmati rice.
