Wash and soak ½ cup of basmati rice in ¾ cup of water for 20 mins.
Cook ½ cup of basmati rice in ¾ cup of water in pressure cooker for 3 whistles.
Once it is done spread in a plate and cool.
In a pan add 1 tbsp of oil and add add 1 thinly sliced onions.
Add little salt and saute this till translucent.
Add 1 tsp of ginger garlic paste at this stage.
Cook till raw smell goes off
Now add few cashew nuts and cook till it turns slight golden brown
Now add ½ tomato, mix well and cook for a minute.
Add 1-2 tsp sambar powder, ½ tsp turmeric powder and salt.
You can add equal quantity of red chili powder and coriander powder instead of sambar powder.
Add chopped lady’s finger and cook on medium flame
Once the vendakkai is cooked, add the cooked rice to this.
Gently mix well evenly.
Garnish with coriander leaves.
