Cauliflower stuffed paratha with step by step pictures

I wanted to post Gobi paratha | Cauliflower paratha recipe for a long time. Somehow, i couldn’t click the picture, as i make this for dinner. Last weekend I made Gobi parathas for breakfast. I took a video on how to make Gobi paratha | Cauliflower paratha. A simple and perfect cauliflower paratha recipe with step by step pictures and full video in tamil. We all love parathas. I usually make different varieties of stuffed parathas. Next to aloo paratha and Paneer paratha, Cauliflower stuffed paratha is loved by everyone at home.

Gobi paratha recipe

Ingredients

  • 2 cups Atta | whole wheat flour
  • 2 cups Grated cauliflower
  • 1 Onion
  • 4 Green chili
  • 3 cloves Garlic
  • 1 tsp Grated ginger
  • 3 + 2 tsp Oil
  • Ghee as needed to cook parathas
  • Coriander leaves few

Instructions

  • In a bowl add 2 cups of atta. Add salt. Add water little by little and knead the dough.
  • Add 2 tsp oil. Apply all over.
  • Cover and keep aside.
  • In a pan add 3 tsp oil and add the cumin seeds.
  • Add finely chopped garlic and green chilis. Saute for few minutes.
  • Add the chopped onions.
  • Immerse the cauliflower florets in normal water by adding salt. Keep it for 10 minutes.
    Pat dry and grate it finely.
  • Once the onion becomes translucent add the grated cauliflower.
  • Add salt. Cook for 2-3 minutes.
  • Switch off and add chopped coriander leaves.
  • Let this cool completely.
  • Make the dough into equal big lemon sized balls.
  • Take a dough ball and dust with dry flour. Roll this into a small disc.
  • Place 1- 1.5 tblsp of stuffing.
  • Close it.
  • Dust with dry flour. Gently roll this into parathas.
  • Heat a pan, cook the parathas on both sides. Smear ghee while making the parathas.
  • Repeat this for the rest of the dough and cauliflower stuffing.
  • Serve with raita or pickle.

Notes

  • You can add red chili powder instead of green chilis.
  • Make the paratha after the stuffing is completely cool. Else it will tear. 
  • You can also add garam masala to the Gobi paratha stuffing. 

 

  • In a bowl add 2 cups of flour and salt. Add water little by little and make a soft pliable dough.
  • Add 2 tsp oil.
  • Cover and keep aside.

  • In a pan add 3 tsp oil and add cumin seeds, finely chopped green chili and garlic.

  • Saute for a minute. Add the chopped onions and cook till translucent.
Cauliflower paratha 3
  • Immerse the cauliflower florets in salt water for 10 minutes. Wash it nicely.
  • Pat dry them nicely. Grate the cauliflower.
  • Add the grated cauliflower to the pan and add in the salt.
  • Cook for 2 minutes. Switch off the stove.
  • Add chopped coriander leaves.
  • Allow this to cool completely.

  • Divide the dough into equal big lemon sized balls.
  • Take one dough ball, dust generously with dry flour.
  • Roll this into a small disc.
  • Place 1-1.5 tblsp of filling into it.
  • Cover it well.

  • Dust again and roll it into parathas.
  • Heat a tawa and place the rolled paratha on it.
  • Cook on both sides.
  • Drizzle withe ghee or oil on both sides.
  • Repeat this for the rest of the dough.

  • Red chili powder can be replaced for green chili.
  • Make the paratha after the stuffing is completely cool. Else it will tear.
  • Garam masala can be added to the Gobi paratha stuffing.
